Islay Lemon Fizz

The Islay Lemon Fizz is a light, refreshing, and layered drink. The Botanist Gin from the Scottish Isle of Islay is full of botanicals, peels, and wildflowers that make a light but full-flavored spirit. Brightened with lemon juice, mellowed with sage, and then pulled together with floral La Aurora Meadow Honey, the gin really shines.


2 sage leaves
1 ounce La Aurora Meadow Honey syrup
1 ounce lemon juice
2 ounces The Botanist Gin
sparkling mineral water


Muddle the sage in a shaker. Add the honey syrup, lemon juice, and gin, and top with ice. Shake thoroughly. Strain over a short glass full of ice, and top off with sparkling water. Garnish with lemon, sage, and raspberries.
