A Bees Knees Cocktail with Nolets Gins and La Aurora Honey created a perfectly balanced, perfectly blended cocktail. The rose, peach, and raspberry botanicals of the gin pair with the fruit and floral notes in the honey to create a light, flavorful, and unusual cocktail. Add a touch of Angostura bitters and pomegranate molasses from Savory Bend to add depth and color.


INGREDIENTS

3 parts Nolets Silver Dry Gin
1 part La Aurora honey syrup
1 part lemon juice
½ part egg white
1 teaspoon pomegranate molasses, optional
Angostura bitters
Lemon peel


DIRECTIONS

If you are using the pomegranate molasses, add it carefully to the bottom of the martini glass.

Fill a shaker with ice.  Add the gin, honey syrup, and lemon juice and shake briefly.  Add the egg white and shake vigorously—but  not too long—until foamy.  Strain into a martini glass.  Add three drops of Angostura bitters; using a toothpick, drag a line through the egg white and bitters to create a pretty design.  Garnish with lemon peel. 

Notes:

*Honey Syrup: Measure ¼ cup of honey into measuring cup.  Add ¼ cup of very hot water and stir until smooth.  Refrigerate when not in use. For a Nolets Bees Knees, use La Aurora Honey.
