La Aurora 2018

The valleys that meander through pine forested mountains and sugar fields host a fête of wildflowers in late summer. The variety of blossoms bursting into color offer up an abundance of sweet, fragrant nectar for the honey bees. They lazily meander from flower to flower, collecting new flavors and combining them into a sweet, layered honey.

Compared to La Aurora 2017

Extremely more dense and ripe than 2017, 2018 Aurora is an interesting take on wildflower honey. The floral component is specifically hyacinth, rather than a spring bouquet. The mid-palette is heavier with ripe apricot, raw sugar, and buttery candied pecans. None of these components was present in 2017’s presentation, whose dominant characteristic was strawberry. The primary similarity between 2017 and 2018 is tart starfruit on the finish. Overall, the mouthfeel is heavier and smoother, with tendencies towards candied fruit, rather than a light, traditional, floral honey.

Terroir

The meadow sky is wide open to sunshine and rain, and the dark, luxurious soil soaks in both to provide the backdrop for the abundance. Blossoms paint the landscape with wildness and abandon. The nectar contains this gala in every drop, providing honey that is multi-layered, sweet, and overflowing with flowers.
