La Aurora 2018 Meadow Honey

La Aurora is floral, fruity raw honey collected from wildflower fields. Is it unpasteurized, unheated, pure, raw honey that has layers of flavor and layers of health benefits. The honey is carefully handled from hive to the jar, never heated above hive temperature, and sourced directly from apiculturists who care deeply about the purity and quality of their bees and honey.

Compared to La Aurora 2017

Extremely more dense and ripe than 2017, 2018 Aurora is an interesting take on wildflower honey. The floral component is specifically hyacinth, rather than a spring bouquet. The mid-palette is heavier with ripe apricot, raw sugar, and buttery candied pecans. None of these components was present in 2017’s presentation, whose dominant characteristic was strawberry. The primary similarity between 2017 and 2018 is tart starfruit on the finish. Overall, the mouthfeel is heavier and smoother, with tendencies towards candied fruit, rather than a light, traditional, floral honey.
